White Forest is the lighter counterpart to our Black Forest - fluffy vanilla sponge, whipped cream and cherries, without the chocolate. It reads as more elegant on a table and eats lighter after a heavy meal, which is why it is the one people choose for weddings, engagements and anniversaries more often than for children's parties. If your guests have just eaten, this finishes better than a rich chocolate cake, which tends to get left half-eaten. The pale finish also photographs well and takes piped messages cleanly.
